So yeah, in there you have to folders, "local" and "remote", plus the file "remotecache.vdf", copy the two folders to whatever backup place you want. Now to start fresh you need to delete the save data withing the menu of the game. Then to load your old save just copy the two folders back to their original place and overwrite everything.
