The charco saddle i have seen drops for in cave crates and Deep sea crates on the Island. Haven't tried fishing rewards yet so im not sure.
Gigas have higher base damage then a Carcha and if there aren't any enemies spawning then the boss then the buff from Carcha's are pretty much useless. Though if there are enemies spawning then go for Carchas. carchas for ones with adds, ones without your choice. probably whatever you can find a better saddle bp for.
